Preheat your oven to 350F and line a baking sheet with parchment paper. In a medium sized bowl, whisk together the flour, baking powder, baking soda, cacao powder, and salt and set aside.
In another bowl, combine the sugar, apple sauce, and water. Add the wet mixture to the dry, folding in your chopped chocolate.
Scoop about 2 Tbsp worth of batter onto your baking sheet, or use a cookie scooper, and allow them to bake for about 20 minutes.
Let them cool before filling with ice cream - ya don’t want it to melt!
