½ bag Saffron Road roasted chickpeas (any flavor!)
1 lb chicken tenders
2 eggs
Salt
Pepper
Directions
if using oven.. bake at 400*
Remove any fat from chicken and set aside.
Crack 2 eggs and whisk then adding salt and pepper.
Add chickpeas to food processor until flour breadcrumb consistency.
Dip chicken in egg wash mixture, coat chicken completely in crumbs, set in fryer or on baking sheet (with parchment paper) - cook in oven for 20-30 minutes (15-18 in air fryer)
