Gluten-Free Honey Mustard Chicken Sandwich


  • 1 Mikey’s Original Grain-Free English Muffin
  • 2 slices fresh tomato
  • ¼ cup shredded red cabbage
  • ½ teaspoon dijon mustard


  1. Cook chicken. Bake chicken tenders according to package directions. 

  2. Toast English muffin. Toast English muffin in a toaster oven according to package directions. 

  3. Top one half of muffin with chicken tenders and cheese. Return to toaster oven until cheese is melted (about 2 minutes). 

  4. In a small bowl, mix together honey and mustard. Spread on the remaining muffin half. 

  5. Remove muffin from the toaster oven and top with tomato, lettuce, cabbage, and remaining muffin half. Serve.
